Today, I’ll share a recipe many have been waiting for—a meringue roll. This is a marvel of the dessert world: incredibly delicate and light, quick to prepare, and absolutely delightful in taste!

INGREDIENTS

Meringue:

Egg whites – 190 g (from 6 eggs)
Citric acid – a pinch
Salt – 1/4 tsp
Sugar – 250 g
Cornstarch – 25 g
Cream:

Cream cheese – 150 g
Powdered sugar – 20 g
Heavy cream (33%) – 100 ml
Filling:

Strawberries
Decoration:

Heavy cream (33%) – 200 ml
Strawberries, mint
Let’s Start Cooking:

Step 1: Preparing the Meringue

Take 190 g of egg whites (approximately 6 eggs), add a pinch of citric acid and 1/4 teaspoon of salt. Begin whisking at medium speed until soft peaks form.

Gradually increase the mixer speed and add 250 g of sugar in portions, whisking for 15–20 seconds after each addition.

Continue beating until the meringue becomes glossy and forms stiff peaks.

Add 25 g of cornstarch, gently fold it into the meringue, and beat briefly until combined.

Line a baking tray with parchment paper (preferably silicone-coated), spread the meringue evenly using a spatula, and sprinkle with almond flakes for extra aroma.

Place the meringue in a preheated oven at 150°C (300°F) and bake for 30 minutes.

Step 2: Preparing the Filling

Use seasonal berries, such as strawberries, slicing them for the filling.

After the meringue bakes and turns slightly golden, take it out of the oven, place a cooling rack on top, and carefully flip it over. Gently peel off the original parchment.

Allow the meringue to cool completely.

Step 3: Making the Cream

Combine 150 g of cream cheese with 20 g of powdered sugar. Using a mixer, gradually incorporate 100 ml of heavy cream and beat until thick and fluffy.

Spread the cream evenly over the cooled meringue and top with fresh strawberries.

Step 4: Rolling and Chilling

Gently roll the meringue into a log, wrap it in parchment paper, and refrigerate for 1–2 hours.

Step 5: Decorating and Serving

Before serving, decorate the roll with whipped cream piped through a pastry bag, and garnish with berries and mint for a beautiful finish.
